La Fonda Del Oso: Carrot Loaf with Yogurt Glaze

Here is a great recipe guaranteed to warm up these chilly autumn nights! You can find the original recipe for carrot loaf here

Ingredients I used: 
Cooking spray
2 cups flour, plus more for pan
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup brown sugar
1 small non-fat plain greek yogurt
1/4 cup grape-seed oil
2 large eggs
2 teaspoons ground ginger
2 large carrots (grated)
1/4 cup confectioners sugar


Preheat oven to 350

Spray a 9 x 3 x 5 inch loaf pan with cooking spray and dust with flour. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon and salt. In a separate bowl whisk together sugar, 1/3 cup yogurt, oil, eggs and ginger. Stir dry mixture then stir in carrots. Transfer to baking pan and bake for 50 minutes. Stir together remaining yogurt and confectioner's sugar for glaze.
